Blue Green Freckles Smoothie
Makes about 24 oz.
2 Granny Smith apples
1/2 English Cucumber
1/2 lemon (or lime)
1″ piece ginger
1/2 c. blueberries
2 small avocados
Juice apples through ginger. Put juice into a blender and add blueberries and avocados. Blend until smooth and thick.
Smoothies are fantastic for when you need lighter fare – after Christmas and New year, or after an illness. They’re great when you just need to give your digestive system a break, but you can’t afford to lose energy. Nearly all of our sweet side smoothies start with Granny Smith apples because they’re not too sweet and lend a zing that really lifts the whole drink. You can use any tart apple.
Avocados are great brain food and fantastic prebiotic food that gives your good flora something to get stuck into.
We like to avoid adding water to our smoothies, so we almost always have cucumber. Cukes have 22% of your daily value of Vitamin K, good for preventing excessive bleeding and bruising, and for bone metabolism. Vitamin K is fat soluble, so works beautifully with the avocado. Cucumbers and blueberries are both rich in antioxidants, which is great for anyone with physical or emotional stress. Finally, cucumbers have analgesic properties which is great if you suffer chronic pain or if you’re recovering from a workout.
